Jeruk Petai / Stink Beans Pickle



In Malaysia we call it PETAI. I don't really know what it supposed to be call in English. Some people call it Stink Bean, some others call it Bitter Beans.

But in Wikipedia it called "Parkia Speciosa". Let me give you a real photo of this Petai :

How to make this Stink Bean Pickle? Let me share you the recipe.

Ingredients :
Petai
Clean Water
Salt

Method :
1. Boil raw Petai with the skin in a pot. 
2. Take out the petai and put in a bowl soak with clean water about 1-2 days for the self-peeling process.
3. Clean it up, put it in the jar with full of clean water (must in ambient temperature). 
4. Add in a bit of salt. Let it in a fridge about 2-3 days before you eat it.

Masak Lemak Tempoyak Cili Api Ikan Patin




This is one of my favorite dishes. Its a Malay food. Not a traditional food but one of best food in Malaysia. 
Its similar to Ikan Patin Masak Tempoyak, but the different is, we use coconut milk in this recipe.

Okay let me share the recipe with you.

Ingredients :

Ikan Patin clean and cut as you preferred.
Santan / Coconut Milk about 1 cup
Water about 2 cups
**Chilies (its up to you, how many you preferred)
**Onion
**Garlic
**Turmeric 1 inch
Daun Kunyit / Turmeric Leaf  (tear it to 5 pieces)
Lemon Grass about 1-2
Tempoyak / Fermented Durian

Method :
1. Belnd Onion, Garlic, Chillies & Turmeric
2. Put it in the pot with Ikan patin, Daun Kunyit, Lemon Grass, Tempoyak, Santan and Water
3. Heat it and stir it. But please be careful when you stir it. Slowly stir and make sure do not crush up the fish.
4. Cook until the fish tender. Then done !!

It seriously easy, but not all people will eat this food because some of us don't really like duroan. But let me tell you this, a fermented durian will not smells like normal durian.
Maybe you should try it.

Tumeric Chicken Fried Recipe



Salam..

Wanna try our Malaysian Food? 
Here is Turmeric Chicken Fried..

This portion serving size is for 3 pax

Okay i just make it simple for you guys.

Ingredients :
Chicken (any part you preferred) clean it and put a side
Chili ( i am a spicy person so i use a lot of chilies) this one is up to you, if you are not a chili person, the best is, don't add any chili.
1 Onion thick sliced
1 Carrot cut in length
3/4 Broccoli
6 Baby Corn cut it thick
3/4 Cauliflower
2 tablespoon of Turmeric Powder
4 tablespoon of Corn Starch
1 Egg
1 teaspoon White pepper
1 tablespoon of seasoning powder (im using Maggi Cukup Rasa)
Oil for frying process (deep fry)

Method :
1. Add on chicken, turmeric, white pepper, egg, corn starch and seasoning powder in a bowl and marinate about 1 hour.
2.  Heat the oil and add in the chicken. Fry until the chicken tender. Put a side.
3. Fry chili, onion, baby corn, carrot, broccoli, cauliflower in the same oil. Then put a side.
4. Add on all the ingredients in one blow and mix it.
Tadaaa..

Ayam Tumis Kurma (Kurma Chicken Stir Fry)



Salam..

Hi cooking lovers !! Hi Everyone !!
Here here..

This portion size is for 3 pax

Okay we start it now.

Ingredients :
Chicken (any part you preferred) clean it and put a side
Blended ingredients (2 onion, 4 garlic, 1 inch ginger)
Onion sliced (i'm using holland onion)
Chili (this is up to you, also can replace it with black pepper)
2 tablespoon of Kurma Powder
1 tablespoon of seasoing powder
Salt
Oil for stir fry
1/2 cup of water

Method :
1. Heat the oil in pan
2. Add in blended ingredients, stir fry in about 5 minutes
3. Add in Kurma Powder, stir fry about 8-9 minutes
4. Add in chicken, chilies, sliced onion. fried until the chicken tender.
5. Add water, seasoning powder and salt.
6. Stir fry about 10 minutes and done.

Ayam Cincang Daun Basil



This one is my favorite Thai Food. Here, let me share with you the recipe

2 table spoon of Ground Nut Oil (I use KNIFE brand)
¼ cups of garlic
500g Chicken minced
1 Table spoon Oyster Sauce
2 Table Spoon Fish Sauce
1 cup fresh basil
10-15 chili (small cut)

I have amended the original recipe, which i add in below ingredients :

4-5 Cherry Tomatoes (cut into two)
1/2 of each color of capsicum and diced it.

How to do it:

1. Heat the groubdnuts oil in the pan
2. Add in Garlic and stir it until it turn into gold color.
3. Add in chilies, fry it.
4. Add in all capsicum.
5. Add in Chicken minced, stir fry it
6. Add in oyster sauce, fish sauce, Cherry Tomatoes and the basil leaf
7. Stir fry about 7-8 minutes and its ready to be serve
